1 Recipe 3 Pancakes



Hello again!

 School is finally back in and parents all over are breathing sighs of sweet relief. Not that we don't love our little ones but us moms and dads need a break from our little leggo loving, chocolate milk chugging, cartoon watching, adorable tyrants lol.

 What better way to pamper ourselves than enjoy a nice quiet breakfast after the kids leave in the morning. My son loves pancakes and wants them almost every morning but I definitely get bored of the same thing day after day. So here are 3 ways to jazz up your pancakes and an easy pancake recipe (for those times we run out of box mix).


  As a kid my mom would make me chocolate chip pancakes as a special treat and even now my chocolate chip pancakes can't compare to how good I remember hers tasteing.❤️




Ingredients-

Pancake Mix-

3/4 cup milk
2 Tbsp Lemon Juice (or vinegar)
1 cup All-Purpose Flour
2 Tbsp White Sugar
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1 Egg

Pancake Fillings-

1 cup Chocolate Chips
1 cup Frozen Strawberries thawed and drained (keep drained liquid)

Cinnamon Filling-

4 tablespoon Butter (melted)
1/2 cup Brown Sugar
1&1/2 teaspoon Cinnamon
1 Egg white

Syrup Recipe- *optinal*

Cinnamon Roll Glaze-
 2 cup Powdered Sugar
3 Tbsp Water or Milk 

Peanut Butter Syrup-
1/2 cup Warm Maple Syrup or Honey
1/4 cup Smooth Peanut Butter

Strawberry Syrup-
Keep the strained liquid from the frozen strawberries and warm up in microwave.

Directions-






Step one. In a bowl combine the milk and lemon juice. The lemon juice will sour the milk and make it chunky. This will act similar to buttermilk and is easier for me because I never have buttermilk on hand. Set aside for 5 minutes while you combine the dry ingredients.


Then add one egg to the sour milk and stir to combine.


Add the wet to the dry and stir to combine. Try not to over mix. Some lumps are ok.


If making Cinnamon Roll Pancakes leave the batter as is and mix together the cinnamon filling.


I like to put my cinnamon filling into a squeeze bottle for easy application. If you don't have a squeeze bottle an empty mustard or ketchup bottle cleaned out works just as well.


Add a ladle of batter to your pan and swirl the cinnamon filling on top. Cook pancake as usual and flip when bubbles form on the top.


For strawberry pancakes drain the thawed strawberries and fold into the pancake batter.


Cook as usual.


Do the same for chocolate chip pancakes.



That's it! An easy way to jazz up everyday pancakes to make them special. I hope you try them with the recommended syrup to make them extra good.
