Ghost Pepper Pork Tacos / Food Challenge



Hey guys!

 We are doing a fun challenge this week! I asked my hubby to go to the grocery store and pick out 4 or 5 ingredients that I would try to combine into 1 dish. They could be anything he wanted, stuff he thinks would never go together.  Very Iron Chef lol.
 He picked pork loin, ghost pepper salsa, hummus, and kiwis. After a little thought, this was the recipe I came up with. Spicy pork tacos with a cool hummus cole slaw and sweet kiwi/mango salsa. The question is, can hubby handle the heat lol. As part of the challenge, he is required to taste it.  



Ingredients-

Flour Tortillas
Pork Loin 1-2 lbs
1 Jar Ghost Pepper Salsa (or whatever salsa you like)

Cole Slaw-

1 Bag Cole Slaw Mix

Dressing-

1 cup Hummus
1 Tbs Vinegar
2 tsp Sugar
1/2 Lime Juiced
1/4 cup Mayo
1 tsp Ghost Pepper Salsa (or Sriracha)
salt & pepper to taste

Kiwi Salsa-

2 diced Kiwi
1 diced Mango
1/2 cup diced Red Bell Pepper
1/2 cup diced Red Onion
1 diced Jalapeno
1/4 cup Lime Juice

Directions-

Marinate the pork loin in the ghost pepper salsa for at least 1 hour or even over night.


 Bake or grill the pork loin until it reaches an internal temp of 160F. My pork loin was a little over 1 pound so I baked it in a 400F degree oven for about 30-40 minutes. Slice after it cools.




 In a bowl combine the hummus, vinegar, sugar, lime juiced, mayo, ghost pepper salsa or sriracha. Salt & pepper to taste.



 Pour dressing over the cole slaw mix and stir to combine. Keep refridgerated.




 To make the kiwi salsa combine the chopped kiwi, mango, red bell pepper, red onion, jalapeno with the lime juice. You can let it marinate or use right away.




Assemble your pork tacos and enoy!
