Hand Pies To Celebrate Pi Day

Happy Pi Day! 兀
March 14th is the day to celebrate the mathematical constant π. Also known as pi, the first three and most recognized digits are 3.14. National Pi Day is celebrated by pi enthusiasts and pie lovers alike! The best way to celebrate is by eating pie! (Duh) I wanted to make some simple hand pies that can be eaten on the go by my busy boys.

These can be made quickly by using store bought pie dough and canned filling or make it all from scratch with your favorite pie recipe. Here's my apple pie recipe for another blog post and here are the pie pops I made last year. Now lets do this!

Ingredients-

1 box roll out Pie Crust
1 can Pie Filling (any flavor)
1 Egg
1 Tbsp Water
Sugar

Tools-

Rolling Pin
Large cookie cutter or drinking glass
Baking Pan
Fork

Directions-

Leave your pie crust out for 10-15 minutes on the counter at room temp to make the dough easier to work with. Roll out your pie crust and cut out large circles with a cookie/biscuit cutter or a large drinking glass. The size doesn't really matter. You can make them as big or little as you wish, the only difference will be the amount of filling you can put in it. Also you can re-roll the dough scraps for more pies.

Place your circles on a baking sheet and add a spoon full of filling to each one. Mix together your egg and water and brush the egg wash along the edge to help seal.

Fold in half and use a fork to crimp the edge to seal together. If the filling is gushing out then just add less filling until you can close it.

Brush with some more egg wash and sprinkle with sugar. Then bake @ 400 degrees F (204 C) for 15-20 minutes or till golden brown.

Decorate with little Pi symbols if your ambitious.

Done! That's all there is to it. With store bough ingredients this can easily be made in 30-40 minutes. Plus these easy little pies can be thrown into your kids lunch box for a fun surprise. I'm sure most of mine will end up in my hubbies lunch bag. lol
