Cherry Jello Cupcake


Hello my people!
 Hope everyone is doing good. I'm still freezing my butt off up here in the great frozen north that is North Dakota. Now that I have moved into a house I am dreaming of spring time ๐ŸŒธ. For once, I have a yard that I can do stuff in! However, spring won't hit here till April (if I'm lucky). So until then I am making cherry cupcakes to make it feel like spring. 

 These cute cherry cupcakes are like a poke cake (if you've ever had one). With cherry jello to soak into the cake and make the pink frosting. I also added chopped bits of maraschino cherries๐Ÿ’ into it for good measure. Its very cute, very pink and my hubby gave it 2 thumbs up.

Ingredients-

 Frosting-
1 box (85g) Cherry Jello
1 (8oz) Cool Whip
1/2cup Boiling Water
3/4cup Ice Water

Cupcake-
1/2cup Sugar
1/2cup Melted Butter
1cup Milk
2 Egg
1teaspoon Vanilla
2cup Flour (all-purpose) 
2teaspoon Baking Powder
1/2teaspoon Salt
1 (10oz) Jar Maraschino Cherries (well drained & chopped)


Directions-

To make the cupcakes preheat your oven to 375F (190C).


Mix together the sugar, melted butter, milk, eggs & vanilla.



Then add the flour, baking powder & salt. Mix well.



Fold in the chopped maraschino cherries and divide the batter between 12 cupcake liners.



Bake for 15-20 minutes or until a toothpick comes out clean. Next, start the jello.



Add the jello to your boiling water and stir till dissolved. Then add your ice water and stir till the ice is dissolved.



Remove 1/4 cup of this jello and set aside for the cupcakes.



Mix in half the cool whip into the jello and stick into the fridge for 1 hour to set.



After your cupcakes have baked, take a fork and poke some holes. Doesn't matter if they are still hot or cool.



Remember that 1/4 cup of jello? Spoon 1 teaspoon over each cupcake. I leave them in the cupcake pan for easy clean up. Also, if your jello starts to set before you get a chance to spoon it over the cupcakes just pop it in the microwave to liquefy it again.



Once your jello and cupcakes are cool and set then fold in the remaining half of cool whip into the jello frosting.



Spoon the frosting into a zip lock bag for easy frosting. (It's not necessary but it looks cute.)




Pipe on the frosting and garnish with another cherry if you have extras. Keep cupcakes cool in the fridge and enjoy.

Very cute and can be made with any flavor of jello. Strawberry jello would be great with chopped strawberries inside or berry blue for some bright color. You could make the whole rainbow if you wanted lol.
