10 Minute Fried Rice

 How ya been? I've been busy😩, I'm talking like up to my eyeballs with S#*T, busy. Idk, March has just been a crazy month with work, chores, meetings, parent teacher conferences, doctor appointments and more. Its definitely made me appreciate fast cooking recipes. You know what I mean, when you want food but not some frozen crap that you heat in the microwave. Something quick, yet filling and still kinda homemade-ish. 
 This is my easy fried rice recipe that can be made in as little as 10 minutes. I know your like (she's full of it) but I swear it can be done. The secret is I usually use leftovers to make it. I'll take some leftover chicken or pork from the night before with leftover rice or instant box rice and BAM, DONE. I just make sure that I always have canned or frozen mixed veggies on hand with a hidden can of water chestnuts in my pantry. Then when I'm in a pinch to make dinner I can whip this up in minutes. 

Ingredients-

2 Tbsp Oil
2 cups Diced Leftover Chicken (or any meat)
4 cups Leftover rice (or prepared instant rice)
1 Diced Onion
2 Cloves Minced Garlic 
1/2 tsp Ginger Paste (or ground ginger powder)
2 Beaten Eggs
1 can Sliced Water Chestnuts (drained)
1 cup Mixed Veggies (frozen or canned)
3 Tbsp Soy Sauce
Salt & Pepper to taste


Directions-

 In a pan heat up your oil and add in the garlic and ginger.



 Then add in the diced onion and cook 2-3 minutes till soft.



 Next add in the diced meat and heat through.



 Then made a small clearing in the center of the pan and add the eggs.



 Scramble the eggs and stir together.



 Now add in the leftover/prepared rice.



 Next add in the mixed veggies. If frozen, cook for a few minutes to thaw.



 Stir in the water chestnuts.


Last add in the soy sauce and salt & pepper to taste.






 That's it! Serve it up for a fast meal. If you make this and you're like (this took longer than 10 minutes 😡) don't worry. After you make it a few times you'll see that its really a dump meal. I just keep my pan on the stove and grab the ingredients and leftovers from my fridge. Even if you take your time while making this it's still a fast and yummy fried rice. Plus it's a great way to use up leftovers.
