Chicken Cordon Bleu & Parmesan Potato Wedges

 Hey guys!
 School is officially back in session and my 4 year old is in preschool! Thank you school for taking my child (I was starting to run out of ways to cope over the summer ๐Ÿ˜–). School is back and now I am back on blogger! Did you miss me?(did you know I was gone?). Nope. Ok, on to the food. lol


Here is a easy week night meal that will hopefully please everyone, Chicken Cordon Bleu and Parmesan Potato Wedges. This is a great cheese lovers meal and how can you say no to those golden, cheesy potatoes........so crispy. ๐Ÿ˜› 

Ingredients-

Chicken Cordon Bleu-

4 Chicken Breast
4 Slices Ham Deli Meat
4 Slices Swiss Cheese
1 cup Italian Seasoned Breadcrumbs
1 cup Parmesan Cheese
3 Large Eggs
Salt & Pepper to taste

Parmesan Potato Wedges-

5-6 Potatoes (washed and wedged)
1/4 cup Melted Butter
1 cup Parmesan Cheese
1 teaspoon Garlic Powder
1 teaspoon Rosemary
Salt & Pepper to taste


Directions-

I start with the potatoes because they take longer to cook, so first wash and wedge the potatoes.








Next take a 9x13 pan and pour in the melted butter.




Then take the parmesan cheese and sprinkle it on top of the butter. No need to mix just be generous and add as much as you need. 






Place the cut potatoes on top of the cheese so each wedge is in contact with cheesy goodness. You just want a single layer which might be hard depending on the size of your potatoes. I ended up using 2 pans for mine. 






Last sprinkle on the garlic powder, rosemary, salt and pepper.






Bake at 400° Fahrenheit (200° Celsius) for 40-45 minutes, or till the potatoes are tender and the parmesan is a nice golden color. Let cool a few minutes so the parmesan crust will stick to the potato.

Next the chicken!

First roll up the ham and swiss cheese till you got a nice little tube like so.








Then take your chicken and with a sharp knife (please don't cut yourself) make a cut into the side of the chicken to make a pocket. You don't want to cut all the way through, just enough to make a space for the ham and cheese roll up.



Hide the ham and cheese inside and you can secure it with tooth picks if you worry about it falling out and season the chicken with salt and pepper.



For the breading, mix the breadcrumbs with the parmesan cheese in one bowl and in another beat 3 eggs. Dip the chicken into the eggs then roll it in the breadcrumbs till evenly coated and place on a baking sheet.








Bake 20 to 30 minutes until done or a thermometer reads 165° Fahrenheit (75° Celsius).




All Done! Week night dinner for hungry kids after a long day of school and homework. Just add a vegetable or nice saladษ• to round out the meal. We can pretend we are healthy lol.
