Chocolate Mousse




Hello, my fellow chocolate lovers.
 If you're like me and you love chocolate, then rejoice! April 3rd is National Chocolate Mousse Day. Its the best reason to make some delicious chocolate mousse and eat it all yourself. 

 In case you were wondering whats so great about chocolate mousse, its all about texture. Unlike pudding, mousse is lighter and fluffier. The lighter texture comes from the air whipped in the cream when you make it. Also its usually made with bittersweet or semisweet chocolate which has a higher percentage of cocoa solids to give you that pure chocolate taste. Thankfully its pretty easy to make and only requires a few ingredients. 




Ingredients-

4 Large Egg Yolks
4 Tablespoon Sugar
2 Cups Heavy Cream
8oz Bittersweet or Semisweet Chocolate
1 Teaspoon Vanilla

Directions

 In a medium pan whisk egg yolks, 2 tablespoons of the sugar and 3/4 cup of the cream. Cook over a medium/low heat, stirring constantly for 3-4 minutes. Do not boil!



Its ready when it starts to thicken and coats a spoon.


 Strain the mixture if you see any lumps. This might be bits of over cooked egg.







Add the chocolate chips and vanilla to the warm egg mixture and stir till the chocolate it completely melted. 








 Set the chocolate mixture aside in the fridge to chill while you make the whipped cream. Beat the remaining cream and sugar with a electric mixer until stiff peaks form.




 Gently fold the whipped cream into the chocolate mixture. You don't want to beat it in and lose that airy texture. Just keep folding with a rubber spatula until there are no more streaks of white.





 Voila, Its done! Serve it up in a cute dessert dish and top with more whipped cream. 



 Let me just say its like a heavenly cloud party in your mouth (not weird at all).
