Today I have a yummy Lemon Curd recipe I wanted to share. It also works just as good with Lime. Its a wonderful sweet and tart puddling like treat.
This stuff is awesome in pies, cakes, with fruit or on toast. Hell, just dunk your face in it and call it a day. 😛Plus it only takes about 10 minutes to make. Here's the recipe.
3 Large Eggs
3/4 cup sugar
1/3 cup Lemon or Lime juice (any juice works even bottled juice)
4 Tablespoon Butter
In a heat proof bowl mix together eggs, sugar and juice. Place bowl over a pot of boiling water to make a double boiler. Stir mixture constantly and cook for about 10 minutes.
Keep stirring so the eggs cook evenly and don't scramble in the bowl.
Its done when the mixture gets thick like pudding and will coat the back of a spoon.
Last add in the butter and stir till melted. That's it! Now you can transfer it to a jar and store it in the fridge. Definitely one of my favorites and I hope you like it too. Let me know if you try it and I'll see ya soon.
