Megans Taco Bake



Hey everyone,
I'm back with another recipe. I love warm and spicy comfort food in the winter (otherwise I'd be a frozen Megan like in the movie The Shining).


Now that I think about it you probably didn't want that image in your head (sorry 😩 my bad)

Megans Taco Bake, just the right amount of spice and comfort to please the people. My hubby loves it and I hope you like it too.


 Ingredients  

1 1/3 cup Rotini Pasta (or about half of a 12oz box)
1 pound Ground Beef 
2 cloves minced Garlic
1 can Corn
2 (16oz) jar of Salsa
1 Onion, chopped
1 Bell pepper, chopped
1/2 teaspoon Oregano
1/2 teaspoon Cumin
1/2 teaspoon Chili Powder
1 cup shredded Cheddar Cheese

*Optional Garnish*
Tortilla Chips
Sour Cream 
Chopped Cilantro
Green Onion

Directions 

Preheat oven to 350 degrees. Boil and drain pasta then set aside for later. In a pan brown the ground beef. 



 
Remove the beef from the pan and drain off extra grease. Next add your onion, bell pepper and garlic to the pan and cook on medium heat till tender. About 5 minutes.


 Then add your beef and cooked noodles back into the pan.
Next stir in the seasonings (oregano, cumin,chili powder) with the corn and salsa. Mix until everything is combined. 
Transfer mixture into a oven safe pan and cover with aluminum foil (I made mine in a cast iron skillet so it could go straight in the oven). Bake at 350 degrees for 20 minutes or until hot and bubbly. Remove from oven and top with shredded cheese.
Put back into the oven uncovered and bake until cheese is melted, about 5 minutes. Then your done!



Dish up a bowl and add your favorite toppings. I like sour cream and tortilla chips. Tortilla chips are just edible spoons so it'll save you the dishes (you're welcomeπŸ˜‰). I love recipes that are easy to adjust to your taste. If you don't like beef this works just as well with ground turkey, pork and even diced chicken. Or you could even replace the meat with black beans to make it vegetarian friendly. Sometimes I like it more spicy and will add extra chili powder or even cayenne powder, make it as hot as you want.
