I'm back with a creamy and cheesy soup recipe for you. π IDK about you but in the winter I love soup to keep me warm and happy (or else this southern girl would never have survived in the northπ°). My favorite soup is this bacon and corn chowder. Usually I already have most of the ingredients for it in my fridge and pantry so its super easy to make. Plus I'll make lots of extra so I can eat on the leftovers all week.
Here's the Ingredients
2 and 1/2 cups Velveeta (cubed)
1 pound bacon
1 onion (diced)
4 cloves garlic (minced)
1 teaspoon dry thyme
2 tablespoon flour
4 cups chicken broth
1 cup milk
1 can corn (drained)
2 can dices potatoes (drained and rinsed)
salt and pepper to taste
Directions
First dice up your bacon and fry it in your soup pot (because we want the bacon grease for the soup). Once its crispy, remove the bacon to a paper towel leaving the bacon grease.
Next add your onion, garlic and thyme to the bacon grease and cook until the onion is soft.
Next sprinkle flour over onion mixture stirring for a few minutes until the flour is cooked.
Add broth and milk and bring to a simmer, while stirring add corn and potatoes.
Next remove 2 cups of soup mixture and puree in a blender until smooth.
Add puree back into soup then add Velveeta and bacon cooking till cheese is melted. Then garnish with fresh parsley or green onion and enjoy! I always like this soup with good crusty bread to dip in it.
Note: This soup is very easy to change up depending on your taste or budget. Any potato will work in this recipe. I have used everything from fresh to canned to frozen and they all work well. I listed canned potatoes because they are cheap and store well in my pantry. Also the same can be said for chicken broth. If you have homemade that's awesome but bullion cubes work just as well.
