Happy Halloween everyone! 🎃
I'm back with more fun Halloween themed treats. Well, this is more meats than treats but you got to have some gore for Halloween lol. This is such a fun dinner to have with kids. When my son saw the meatloaf he just had to give me his best-scared face and zombie impression.
Plus this meal just begs to be eaten with your hands, just like an episode of Walking Dead with a horde of zombies ripping apart and eating a victim. Horde....... does anyone else like that word? I literally only use it when talking about zombies and World of Warcraft. (win/win). Also, the hubby had no problems eating with his hands. He makes a pretty convincing zombie.

So as long as those pictures didn't gross you out here's the recipe.
Ingredients-
1 1/2 Pounds Lean Ground Meat (your choice of meat but I like ground turkey and beef)
1/2 cup Italian Bread Crumbs
1/2 cup Parmesan Cheese
1/2 cup Diced Onion
2 Eggs
1 Tbsp Parsley Chopped (fresh or dry)
1 tsp Garlic Minced
1/2 tsp Dried Basil
1/2 tsp Dried Oregano
1/2 tsp Red Pepper Flakes
Salt and Pepper to taste
1 cup Pasta Sauce
1 Pound Spaghetti Noodles
1 cup Mozzarella cheese
Decorations-
2 hard boiled eggs
Onion for teeth
Red & Black food coloring
Directions-
Step one- Hard boil 2 eggs to use for the zombies eyes.
Everyone has different methods to boil eggs but I put mine in cold water. Put it on the stove, and once it has reached a boil I put on the timer for 10 minutes. Then I rinse under cold water and peel. Set aside for later. This works best with older eggs that you need to use up.
In a large mixing bowl add the meat, bread crumbs, parmesan cheese, diced onion, eggs, parsley, garlic, basil, oregano, red pepper flakes, pasta sauce, salt & pepper. Then mix together. I like to use food safe gloves and mix by hand.
Now we can shape our zombie head. If you happen to have a mold, that works pretty well plus they are easy to find this time of year. Also I you didn't want to use this shape I've seen people make feet and brains instead.
TIP- If you want your zombie to hold its shape well while baking then make sure to use lean meats so the meatloaf won't distort much after baking. That's why I used 1 pound ground turkey and 1/2 pound ground beef. The flavor is still meaty without all the extra grease.
If you don't have a mold its pretty easy to shape by hand.
To shape by hand you just need to form the head into a keyhole shape. Use your fingers to make a cavity for the eyes, a rectangle for the mouth and triangle for the nose. Then add your eggs into the eye holes and onion teeth into the mouth.
This is optional but if you want to make a "brain" for your zombie then just mix some red food coloring into some shredded mozzarella cheese. Then using your hands squish it into a ball shape.
I used a knife to lobotomize my zombie head.
Cut out a cavity to insert your brain then place the meat back on and re-shape the head to hide seams. Then bake for 1 hour at 350F (176C).
While the meatloaf is cooking you can boil your pasta. For fun I added black food coloring to dye the noodles. I wanted it to be my zombie "hair". However, my black food coloring made the noodles purple. It still looked cool and its fun to eat rainbow pasta.
It looked very much like a witches cauldron.
That's it! Plate up your zombie head with or without hair and dig in.
Cutting into the brains with all the oozy cheese is very satisfying. Its is hubby and son approved!
