Fruit Pizza (Things to do with cookie dough: Part 1)


Hey guys,
 Sooooo..... Last month my son had a cookie dough fundraiser for school. He did really well and sold a lot of cookie dough to family, friends and my co-workers. But I may or may not have gone a little over board with how many I bought *cough* 10 *cough*. The tubs are about 3 pounds each so I've been looking for ways to use it up. So I'm calling this my, Things To Do With Cookie Dough series. Keep a lookout for future posts to see how I'll use it up and gain 50 pounds. 😭

 Today we are making Fruit Pizza! I love this stuff, its so good and it's just in time for spring and fresh berries. I'm going to use a lemon cookie dough with white chocolate chips, but use any cookie dough you like or even store bought. 

Ingredients-

16oz Cookie Dough
8oz Cream Cheese
1/3 cup Sugar
1 teaspoon Vanilla
1-2 Kiwi peeled, halved and sliced
1 cup sliced Strawberries
1 cup Blueberries
Optional-
1/2 cup strawberry jam

Directions-

 Take your cookie dough and press it into a pizza pan or large cast iron skillet.







Bake 350 degrees F for 12-16 minutes. If center looks soft that's ok. It will firm up as it cools but let it cool a good 20-30 minutes.





 Next beat together the cream cheese, sugar and vanilla.



 Spread that onto your cooled cookie crust.



 Then add on the fruit. You can use any fruit you like. Grapes and mandarin oranges also work well but i'd avoid apples and bananas that would turn brown.




You can also warm up some jam to brush on top to give it a nice shine but that's totally optional. This is a nice dessert to use fresh fruits on and its soooo good.
