Long time no see (I missed you. Did you miss me? No? ok). I am finally back! In case you didn't know I bought a house this year and moved in the beginning of November. Yeah I know it was a horrible time to move, but I was desperate. Now I am settled in and finally able to start posting again (WOOOOO). Since Christmas is right on top of us, I thought that some holiday baking would be the perfect thing to break in my new kitchen and give it that homey feel. When I think of the holidays I think of family and my dads favorite dessert was cheese cake. He may no longer be with us but he will never leave our hearts or our table. I hope this is a cheese cake recipe he would have liked (miss you dad💗).
Ingredients-
Filling-
6oz White Chocolate Chips
1/4cup Heavy Cream
2 (8oz) Cream Cheese (soft)
1/3cup Sugar
4 Large Eggs
2 Tbsp Corn Starch
1 Tbsp vanilla or Orange extract
Topping-
1 (14oz) Can Cranberry Sauce
2Tbsp Corn Starch
Crust-
9 inch Store bought or favorite recipe
Directions-
Step 1-
hop in your car and go to the store and buy a crust. lol I did intend to include a crust recipe for this cheese cake but unfortunately it didn't work out. I bought some salted caramel oreo thins to make the crust but not sure if it was to much butter or not enough oreo. Oh well🤷, the store bought one worked just fine.
To make the filling heat the heavy cream in the microwave till warm and pour over the white chocolate chips. Set aside to let the chips melt and stir together.
Then beat together the soft cream cheese with the sugar, eggs and corn starch. Last add in the white chocolate mixture and vanilla.
Add your cheese cake filling to your crust and bake for 60 minutes at 325 degrees F.
When your cheese cake is finished baking let it sit out at room temperature to cool slightly before adding the topping. If your cheesecake has a dome to it letting it sit for a bit to let it calm down.
In a microwave safe bowl mix together the cranberry sauce and corn starch. Pop it in the microwave for 1-2 minutes until hot and bubbly. Pour over the cheese cake and refrigerate till cool.
Drizzle with remaining white chocolate if you have any and enjoy.
