It is officially summer in North Dakota! Lets do a happy dance!
If you know anything about me then you know I hate winter. Lets just take a minute to look at Megan in winter. ⏬
I know what your thinking, "but Megan why did you move to North Dakota if you hate winter so much?". Lets just say there are perks to being out here (I met a great guy who is from this hellish state and we got married *worth it*).
Any ways, now that the evil winter has melted away I get to enjoying warm summer temps. So that means....(drum roll please).... POPSICLES!
Nothing beats cool summer treats and today I am making Raspberry Pops. Super easy and can still be made if you have a popsicle mold or not.
Ingredients-
12oz Bag Frozen Raspberries (can also use fresh)
2 (8oz) Cream Cheese
2 (14oz) Can Sweetened Condensed Milk
1 (8oz) Tub Whipped Topping
*Optional*
Chocolate sauce
Oreos
Directions-
It doesn't get any easier than this.
Step 1- Let raspberry and cream cheese sit out to soften.
Step 2- Throw everything in a mixer.
DONE!
Here's a better explanation because June 13th is National Kitchen Klutzes of America Day and I want you to have a easy recipe.
In a mixer add the soft cream cheese and beat. Next, add in the thawed raspberries. Then mix in the sweetened condensed milk. Make sure to scrape down the sides so all the cream cheese gets incorporated. Last is to add the whipped topping. Give it one last mix and your done. Then you can put it in your popsicle mold of choice and freeze for at least 4 hours.
If you don't have a popsicle mold a good alternative is to get some paper cups and just stick a plastic spoon in it before you freeze it.
Its also good with the hard shell chocolate sauce drizzled in with the filling or crushed Oreo cookies. You could even make a frozen pie with a crushed Oreo crust then add the raspberry filling and drizzle with chocolate sauce. Freeze and cut with a warm knife dipped in hot water. Since its summer I went with the popsicle method since its easy to eat and kids can just grab and go. I hope you try this this summer and I'll see ya soon. 😆
